SELF-CONFIDENCE

We Indians believe in belief.But most of us don't believe in ourselves.
The power of positive thinking can never be underestimated,it has been known to work on those who are seriously deficient in self-confidence.When we start to create a zone of constructive thoughts,it acts like a protective shield,which insulates us against adversities with the power of mind.

MUSHROOM MASALA

INGREDIENTS
1/2 kg boiled mushrooms
250 gms onions
250 gms tomatoes
1 tsp garlic-ginger paste
1 tsp chilli powder
1 tsp salt
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
100 gm oil
a small quantity of ginger,green chilli and green coriander
2 tbsp tomato ketchup

METHOD
Heat oil in a kadai and add onions.Saute onions till they become pink and add tomatoes and mushrooms and all spices except garam masala.Cook till the juice of tomatoes dries up.
Then add ketch up and mix thoroughly.Also add green coriander, ginger,chillies and garam masala.Mix well and the dish is ready for serving.

THE MOON SAVER

A kind-hearted man, looking down to the well, saw the reflection of the moon in the water.
"Oh! My God! The moon has fallen into the well," he muttered mournfully and hurried to fetch a hook tied to the end of a long rope. Quickly, he let the hook fall deep into the well, holding fast to the rope. The hook hit the water and reaching the bottom of the well, caught fast to a stone. Thinking that he had got the moon, the man pulled up the rope with such force that it broke and he fell sharply down flat on his back, nearly unconscious. The first thing he saw when recovered was the moon, which now shown serenely high up in the sky. The man groaned in pain but said contentedly,"I broke my back, but, thank God, the moon is saved.

SOYA JAMOON-YUMMY!!!!

INGREDIENTS:
Maida 1/2 cup
soya flour 1/4 cup
Milk khova 1/4 kg
Dalda 1 tbs
Milk 1tbs
Cooking soda a pinch
Sugar 2 cups
Cardamom powder 1/2 tsp
Saffron colour a little
Refined oil to fry

METHOD:
Dissolve sugar in 2 cups of warm water and prepare a thread consistency syrup.Add color and cardamom powder to flavor the syrup.Keep aside.To the khova add soya flour ,add maida .Knead the mixture with milk,dalda and soda gently to form a soft dough.Prepare firm small balls from the dough and deep fry them on low heat , until golden brown.Drain the fried balls and soak in syrup.When they swell twice their size ,serve jamoons with a little syrup.

NO COMPARISON ANYWAY

Our children are our wealth.We must encourage our children.Do not scold the children in front of anybody and don't tell about them to anybody.Don't compare them with anyone.
"Every flower has its own beauty.We cannot compare two flowers.Nature is the greatest designer.Similarly every human being is different.Each one has his/her limitations.One can put in maximum effort but not everyone can reach Himalayas.Limitations are not mistakes."
Instruct the children using "do''s rather than "don'ts".We can fulfill their desires and feelings as much as we can.
If they realize that their parents are with them and they are for them, they won't do any mistakes.

WHEN YOUR CHILD STARTS MOVING.........

Every parent has to face it,sooner or later.The children will grow up and take flight on their own.The reasons for moving out may vary-career,marriage or need to be independent.
One has to accept that children need their freedom and the opportunity to live life ,the way they want to.We have to support their decision.
Now the world has shrunk because of transport and way of communication.So we can contact them often.
We can revitalize our social life.This is the time to realize dreams for which we never found the time earlier.Develop the hobbies like gardening,collecting things,painting,music,learning a new language,knowing about the current affairs.Have a healthy relationship with the spouse.
Children leaving home is not the end of the life.We must think of what we want to do with the rest of our life.We are also having more responsibilities as our parents did to us.
Bringing up a child to be a responsible adult is not an easy task. If we have done it perfectly,we shall be proud of ourselves.

VANILLA CAKE


INGREDIENTS

2 large eggs
Half cup powdered sugar
Half cup maida
1 tsp baking powder
One-fourth cup milk
Half a cup oil
1 tsp vanilla essence





Method
Sift the flour and baking powder. Beat eggs and powdered sugar till it turns fluffy and double in volume.Add the essence. Mix in the oil to the beaten egg and sugar mixture and stir well. Into this fold in the flour gradually till the entire flour is used.Add the milk for a thinner consistency. Grease a deep bowl and pour the batter in it.Microwave uncovered for four minutes Even if it does not appear firm do not microwave for a longer period.Let it remain for 5 minutes in the oven.After taking it out allow it to cool for 5 to 10 minutes before removing it from the bowl.For those who are not having oven,place the pressure cooker on the stove and take sand in it. Heat the sand and then place the bowl in it and close the cooker with lid without using gascut.Do not use cooker weight.Reduce the flame and keep it for 30 minutes.Then take the bowl from the cooker and allow it to cool.

THE FIRST ATOM BOMB

The first atom bomb was dropped on Hiroshima on August 6,1945 and the next one was dropped on Nagasaki three days later. The devastation,shattering in its magnitude,broke the morale of the Axis Powers and put an end to World WarII.
The human side of the story,involving the death of millions and the mutilation of perhaps an equal number in Hiroshima has been movingly told by Marcel Junod, who was the chief of the unit of the International Red Cross stationed in Japan during World WarII, in his book.. Warrior Without Weapons. This extract describes Junod's visit to the scene of the annihilation three weeks after the event.

IDLI VEGETABLE DELIGHT









INGREDIENTS
2 idlis(sliced lengthwise)
1 onion(sliced)
1 small potato(boiled and sliced)
1 cup mixed vegetables,boiled(peas,carrots,beans, etc)
1 cup sprouts
2 green chillies (chopped)
1 tbsp oil
1/2 tsp jeera
1 tomato(deseeded and chopped)
salt to taste
1 tbsp lemon juice

For garnishing
a few fried cashew nuts,coriander(chopped)

METHOD
Heat oil and saute onions and jeera till onions are brown. Add boiled vegetables, potato, sprouts,green chillies and stir till heated.Add sliced idlis, tomatoes,lemon juice and salt and cook till the contents thoroughly heated.Remove from fire and garnish with cashew nuts and coriander.

THE GREEDY DOCTOR

There was an herb doctor in Korea, who was famous for his ability and also
for his greed.
Once, he cured a child of a difficult disease and as a token of her gratitude, the child's mother
presented the doctor with a pretty silky wallet. The woman said,"Sir, I made it myself.
Please accept it."
Shaking his head, the doctor said harshly, "I don't accept my fee in kind. Give me cash."
The woman felt hurt and humiliated. She asked , "How much should I pay you?"
" Five nyang,"said the doctor.
Without a word, the mother took ten nyang out of the silk wallet, handed them to the doctor,
and left with the rest of the ten nyang she had brought in the wallet to give him.

BREAD CUTLET

INGREDIENTS

Family bread slices-8 nos

Boiled and smashed potato-200 gms

Green chillies-25 gms

Finely chopped onions-50 gms

Mint leaves-5 gms

Coriander leaves-5gms

Garam masala powder-2 gms

Salt-to taste

Turmeric powder-2 gms

oil-20 gms

METHOD
Heat oil, fry green chillies,onions, mint leaves.
Add salt, turmeric powder, smashed potato. Mix well.
Sprinkle garam masala and coriander and make the filling into small balls.

Moisten the bread slice.Place the fillings in the centre and roll the bread into ball shape.
Heat a tawa, put oil, flatten the bread ball with hand.
Fry both sides using oil and serve hot with tomato sauce.

STUFFED KEEMA MATAR PARANTHA

INGREDIENTS
1 cup maida
1 tsp baking powder
1/4 tsp salt
a little warm water to knead
melted ghee for applying inside
and cooking paranthas

For filling
250 gm minced meat(keema)
2 onions (chopped)
2 cloves garlic(crushed)
1 tsp ginger(paste)
2 tomatoes(pureed)
1/2 tsp green chillies(chopped finely)
1/4 tsp turmeric powder
1/4 tsp chilli powder
1/2 tsp garam masala
salt to taste
2 tbsp ghee

To make filling
Heat the ghee and fry onions,ginger and garlic till golden.
Add keema and fry over high temperature for 5 minutes.
Add chillies tomato puree, turmeric powder, chilli powder,garam masala and stir well.
Cover and cook till the keema is nearly cooked.
Add a little water if required to soften the keema.
Add salt.Simmer on low flame till keema is soften and the ghee seperates.


METHOD
Sift together flour, baking powder and salt.
Gradually add warm water and knead until the dough is smooth.
Divide into 4 pieces and shape each into a smooth ball.
Allow to rest for 15 minutes.
Now flatten each ball and roll into a thin round.
Apply melted ghee on it and fold twice.
Roll out into triangles.
Heat a tawa and cook paranthas, using ghee onboth sides.
Place filling in the paranthas, roll up, put in a serving dish and serve hot with tomato-corriander
chutney.
